Sitting down with an easy and fast zucchini garlic pasta and my favorite film from 1987…#Mannequin! I totally forgot Estelle Getty is in it, and I remember loving the music (and still do). Yeah, it’s cheesy, but I’m in uber nostalgia mode…and loving it! A family favorite, zucchini & garlic pasta is a light summer dish. With an already busy week, I didn’t grocery shop and had limited ingredients. I added tuna as a twist, but you could leave it out or substitute with chicken.

INGREDIENTS
4 cloves garlic, whole
2 tbsp. evoo
3 small zucchini, diced
1 can of tuna (optional)
8 zucchini flowers, chopped
1 garlic clove, minced
1 tbsp. butter
1/4 cup white wine
1 lb. cooked pasta
1/4 tsp. black pepper
1/2 tsp. salt
Sautè the cloves of garlic in the evoo for a few minutes, add zucchini & continue cooking until tender. Add remaining ingredients and cook on low while pasta cooks. Add pasta, mix, and top with parmesan & hot pepper flakes.

Total Time: 25 minutes
Serves: 2-4 as dinner; 4-6 as side
