Tuna Stuffed Peppers
1 can solid white albacore tuna
1 cup bread crumbs
1/2 red onion, diced
1/2 cup shredded cheddar
3 eggs
1/4 cup milk
1/4 cup chopped fresh parsley
1 tbsp mayo
1 tsp yellow mustard
Dash of salt & black pepper
Halve two bell peppers. Mix all ingredients and split between the four halves of peppers. Stuff it, stuff it real good. Bake in a greased oven-safe dish for 30-35 minutes at 395 F. Garnish with grated parm or fresh parsley.
1 24-ounce bag of cooked seafood medley
Juice from 1 lemon
1/2 cup fresh chopped parsley
1/2 tsp salt
1/4 tsp black pepper
3 tbsp extra virgin olive oil
Soak seafood medley in boiling water. Place in fridge and chill. Drain. Add all ingredients. Mix well. Add diced celery for extra crunch.
Raspberry Chardonnay Grilled Shrimp
2 tbsp raspberry preserves
2 tbsp old bay seasoning
1/2 cup Chardonnay
Mix ingredients (preserves, spice, & chardonnay) and marinate shrimp for minimum 1 hour. Skewer and grill until pink and cooked.
